¼ cup olive oil
1 onion, chopped
One 14.5 oz. can of chopped tomatoes
1/3 cup golden raisins
3 tbsp. brown sugar
2 tsp. finely grated fresh ginger
3 tbsp. and 1 tsp. red wine vinegar
4 lean pork loin chops (about 1 ½ lbs.)
Salt and pepper
In a skillet, heat 1 tbsp. olive oil over medium-high heat. Add the onion and cook until softened (about 5 minutes). Stir in the tomatoes, raisins, brown sugar, ginger, 3 tbsp. of red wine vinegar, and ½ cup water. Bring to a boil and then lower the heat, simmering until the sauce has thickened (about 10 minutes). Season the pork chop with salt and pepper; in a skillet, heat 2 tbsp. of olive oil over medium-high heat. Add the pork chops and cook, turning just once until cooked through (about 5 minutes). Top the chops with the tomato chutney and serve with fresh green beans!
