Ratatouille Pizza

Ratatouille Pizza

Ingredients:

3 tbsp. olive oil

½ small eggplant, chopped

salt and pepper

½ orange bell pepper, chopped

1 pint grape tomatoes

3 cloves garlic

2 tsp. fresh thyme leaves

½ zucchini, quartered and sliced lengthwise

1 pound refrigerated pizza dough (go for whole wheat dough!)

1 ¼ cups shredded low-fat mozzarella

Directions:

Preheat the oven to 500. In a skillet, heat 2 tbsp. of the olive oil over medium heat. Add the eggplant, season with the salt and pepper, and cook until tender (about 10 minutes) and transfer to a bowl. Add 1 tsp. of olive oil to the skillet and cook the bell pepper until tender; mix with the eggplant. Using a food processor, puree about ¾ of the grape tomatoes, garlic, and thyme and add salt and pepper to taste.

Transfer the mixture to the nonstick skillet and simmer over medium heat until it has reduced to about ½ cup (about 5 minutes). Cut the remaining tomatoes in half and put in a bowl, mixed with the last 2 tsp. of olive oil and the zucchini, and toss with salt and pepper. Stretch the dough into 4 individual pies and set on top of a parchment paper on a baking sheet. Top with the cheese, tomato sauce, and veggies. Bake until crisp (about 15-20 minutes).
