Fire Island Ziti

This dish is packed with veggies and savory sausage!

2 lbs. plum tomatoes, halved lengthwise

3 tbsp. olive oil

2 garlic cloves, minced

1 tsp. salt

8 oz. uncooked whole wheat ziti

2 cups fresh broccoli florets

1 lb. Italian turkey sausage links, cut into ½ inch slices

½ tsp. crushed red pepper flakes

1/3 cup grated low-fat parmesan cheese


Toss the tomatoes with 2 tbsp. olive oil, garlic, and salt. Place cut side down in a baking dish and bake 20-25 minutes (until tender) at 450 degrees. Chop when cool enough to handle. Cook ziti according to package and add the broccoli during the last 4 minutes. In a large skillet, cook the turkey sausage over medium heat until cooked through. Add pepper flakes and cook 1 minute longer. Stir in the tomatoes and heat through. Drain the ziti and toss with the sausage mixture; top with cheese.
