Jamaican Me Crazy Chicken Tropicale

3 medium sweet potatoes, peeled and cut into 2 inch pieces

1 can sliced and drained water chestnuts

1 cup dried cranberries (make sure there’s no added sugar!)

I can unsweetened pineapple tidbits

2 lbs. bone-in skinless chicken breast halves

2 tbsp. Caribbean jerk seasoning

¼ cup dried minced onion

3 tbsp. minced fresh gingerroot

2 tbsp. Worcestershire sauce

1 tbsp. grated lime peel

1 tsp. cumin seeds, crushed

3 fresh thyme sprigs

Hot cooked brown rice


Place the potatoes in a slow cooker and add water chestnuts and cranberries; drain the pineapple and reserve the juice, adding the pineapple to the slow cooker. Top with chicken and sprinkle the jerk seasoning over top. Combine the onion, ginger, Worcestershire sauce, lime peel, cumin, and reserved pineapple juice and pour over the chicken, topping with thyme sprigs. Cover and cook on low for 5-6 hours and serve with rice.
