Spicy Chopped Eggplant

This dish is perfect on its own, or over some whole-wheat pasta for a main course!

1 medium eggplant

4 scallions, minced

3 tbsp. minced parsley

½ tsp. freshly ground pepper

2 cloves garlic, minced

3 tbsp. vinegar

4 tbsp. olive oil

Salt to taste


Preheat the oven to 350; then bake the eggplant for one hour. When it’s cool enough to handle, peel it and chop it coarsely. Blend the scallions, parsley, pepper, garlic, vinegar, and olive oil in a food processor or blender. Put that mixture in a bowl and add the eggplant and salt to taste; serve with wholegrain corn chips or whole wheat crackers!
