Basil Cottage Cheese Dip

This light yet savory dip is perfect for fresh cut veggies and summer grillouts!

Ingredients:

2 cups low-fat cottage cheese

2 tbsp, vinegar

¼ cup chopped scallions

2 tbsp. chopped parsley

6-8 fresh basil leaves, or 1 tsp. dried

Salt to taste

Fresh ground pepper to taste

Directions:

Puree all the ingredients in a blender or food processor and chill. Serve with veggies or whole-wheat crackers.
